世界卫生组织WHO最近发布报告大家, 加工过的肉类 “processed meat” 确认会增加致癌风险。 因为咸肉火腿和腊肠属于每天都会食用的肉类, WHO把他们和用于制造核弹的放射性元素钚(音bu4, plutonium)列为一级致癌物。数据显示,每天食用50克以上的加工肉类会增加18%的大肠癌的患病率!
WHO也将红肉列为可能致癌物! 同时,卫生组织强调合理食用肉类是对身体有益处。
牛津大学专家Prof Tim Key解释,每天食用一个咸肉汉堡并不会增加患癌风险,但是迷恋火腿腊肉的朋友要三思而行。
超越实验室建议大家平衡饮食,注意水果和蔬菜的摄入!

24 October 2015 — The International Agency for Research on Cancer (IARC), the cancer research agency of WHO, has evaluated the carcinogenicity of the consumption of red meat and processed meat. A Working Group of 22 experts from 10 countries convened by IARC classified the consumption of red meat as probably carcinogenic to humans and processed meat as carcinogenic to humans.
